Traditional Japanese soy sauce made in Brazil!

It's Sakura season

donderdag 23 maart 2023

When you think of Sakura, you immediately think of cherry blossom. Or were you thinking about the soy sauce with the blossom logo on it? When the cherry blossoms open, you’ll know that the new spring season is approaching. The trees show you that a beautiful period of sweet bloom is coming. With over 80 years of experience and an exceptional workforce of mainly Japanese, Sakura has truly captured the traditional Japanese taste. With the beautiful cherry blossom in bloom, the taste of the soy sauce becomes even more intense.

And doesn't that make everyone happy?! Blossom represents spring, new beginnings, and growth. The cherry blossom has extra significance in Japan. In Japan, the blossom species, Sakura, stands for life and how we cannot control it. This Brazilian- based company which has the largest population of Japanese people outside Japan, has been dominating the American soy sauce market. Sakura's natural soy sauce ranges from the most traditional dark soy taste to a slightly thinner and lighter range for the convenience of many.

80 years of Sakura

Because soy sauce is originally an Asian product, it might seem strange that Sakura is made in Brazil. The story begins over 80 years ago in 1940, when Mr. Suekichi Nakaya arrives in Sao Paulo after a long journey from Japan to Brazil. He started taking shoyu (soy sauce) and miso (soy pasta) for friends and family, which was a great success and the foundation of the Sakura products we know today.

The production process of Sakura

Sakura soy sauce is a 100% naturally fermented and gluten-free condiment, produced through a two-step fermentation process called koji (solid–state) and moromi (brine). It is naturally brewed for at least 6 months of fermentation. The soybeans and corn are combined with a mold to produce ‘’koji’’. When the ‘’koji’’ is fully fermented, it is combined with salt and water to produce a ‘’moromi’’ mash. After all those steps it is getting pressed, filtered, and heated to produce finished soy sauce.
