80 years of Sakura

Because soy sauce is originally an Asian product, it might seem strange that Sakura is made in Brazil. The story begins over 80 years ago in 1940, when Mr. Suekichi Nakaya arrives in Sao Paulo after a long journey from Japan to Brazil. He started taking shoyu (soy sauce) and miso (soy pasta) for friends and family, which was a great success and the foundation of the Sakura products we know today.

 

The production process of Sakura

Sakura soy sauce is a 100% naturally fermented and gluten-free condiment, produced through a two-step fermentation process called koji (solid–state) and moromi (brine). It is naturally brewed for at least 6 months of fermentation. The soybeans and corn are combined with a mold to produce ‘’koji’’. When the ‘’koji’’ is fully fermented, it is combined with salt and water to produce a ‘’moromi’’ mash. After all those steps it is getting pressed, filtered, and heated to produce finished soy sauce.
